Noble Wines Tasting Notes
2004 Napa Valley Cabernet Sauvignon
The color is opaque brick red and the wine offers copious amounts of cedar, spice and black currants nicely buttressed by toasty oak. After some time in the glass, other flavors will develop such as leather, wet leaves and tobacco. Medium to full-bodied on the palate, the tannins are present without being astringent. Well-balanced with an aged “Bordeaux-like” character, this wine is showing remarkably well now and yet will age 10–15 years.
2005 Napa Valley Cabernet Sauvignon
This attractive dark, ruby-colored wine reveals a tight, but promising nose of sweet kirsch, black currants and high-quality French Oak. On the palate, aromas of blackberries, cassis, earth and a touch of herbs are followed by deep, rustic but yet well-rounded tannins. This medium to full-bodied wine will evolve drastically after being decanted a couple of hours prior. Still youthful, it promises to evolve gracefully for 10–15 years.
2006 Napa Valley Cabernet Sauvignon
This wine exhibits an opaque purple color and a sweet, ripe, olive, chocolate, slightly smoky cassis-scented nose. The quality of the fruit is even more expressive on the palate as black cherry, jammy black currant, plum and a hint of prune seemingly integrates the stony and mineral components of the wine. Full-bodied with some expressive but soft tannins, this powerful Cabernet Sauvignon will definitely benefit from decanting a few hours before enjoying. Will age 20–25 years without a doubt.
2007 Napa Valley Cabernet Sauvignon – SOLD OUT
Dark ruby/purple-colored, with a classy vanillin, black currant-scented nose that has yet to develop in the glass, this wine is tight at first but an exuberant bouquet of licorice, raspberry, cooked strawberries and pain-grille literally explode along with some vegetal and mineral components. Highly concentrated and intense on the palate, this full-bodied wine shows a great balance of mild acidity and moderate tannins. This is truly a Napa Valley gem that can only get better with the time. Decanting 2-3 hour prior a must to fully appreciate this wine. Will age 25+ years easily.

2005 High Valley Petite Sirah
The color is saturated, think black/purple and this massive Petite Sirah offers a great amount of briery, spicy, black raspberry and cherry fruit on the nose. Generous on the palate, with a robust constitution and gobs of glycerin, this supple, full-bodied, concentrated, opulently textured wine should be consumed after a 90-minute aeration in a decanter. If the wine is ready to drink now, there is no doubt that it will age nicely.
2006 High Valley Petite Sirah
This distinctive dark purple-colored 2006 Petite Sirah exhibits flamboyant set of aromatics (black raspberry, cassis and peppery scents). The palate is attractive and possesses some elegant spicy, subtly vanilla, jammy, black fruit aromas with nicely textured yet opulent finish. Ripe with rich tannins, the texture is velvety and this full-bodied wine needs a good hour to open up nicely in the glass. It should definitely age well for another 10–15 years.
2007 High Valley Petite Sirah
The color is a saturated, think black/purple. It offers a dense, mineral, earthy, peppery blackberry and chocolate-scented nose. Intensely spicy, more blueberry and jammy raspberry develop on the palate. Despite its richness and opulence, this 2007 Petite Sirah shows no sign of astringency and the finish is gorgeously opulent and rounded. This is truly a spectacular result from a magical vintage. Decanting 90-minutes prior to enjoying is a must. Will easily age well for the next 15–20 years.
2008 High Valley Petite Sirah
This opaque black/purple-colored wine offers glorious notes of black fruits (blackberry, cranberry and cassis), cooked red pepper and hint of new oak. Extremely rich and opulent, this impressive Petite Sirah offers up more smoky, cherry, spice and peppery characters on the palate. Still young with huge potential, this blockbuster wine requires 2 years of cellaring and will drink well for 15–20 years. Decanting 2-hours prior is a must to experience its true potential.
